The Chablis Premier Cru AOP from Laroche is a fine Chardonnay from Burgundy. The white wine is fruity, intense, elegant, and soft with notes of almond and hazelnut. It perfectly goes with scallop and watercress salad, crayfish or mature goat cheese.
100% Chardonnay Grape are supplied by local growers based in renown Premiers Crus vineyards such as Vosgros, Vaucoupins or Vaulignau. All year round, they work in close relationship with Laroche technical team.
The ripening was slow and fully achieved, without any over-concentration. The skin was pale yellow thanks to a ripeness without excess. Health conditions was very good. The juice has a remarkable balance, with nice acidity, without too much malic acid and the alcohol potential is medium. This vintage is quite similar to 1996 in the remarkable acid structure. It shows characteristics of 2010 and 2008, with a still more beautiful balance.
Whole bunches are collected in pneumatic press, then 12 hours settling at 12-15°C in specially designed wide tanks. Then 3 weeks of fermentation at 18°C in stainless steel tanks.
The wine has aged 9 months on fine lees in stainless steel for most of wines and 12% in oak barrel. Minimum filtration to preserve the maximum natural character of the wine.
On the eye it has bright lemon colour with soft hints of reflects. The white wine carries an intense, elegant, soft and fruity nose with notes of almond and hazelnut.
On the palate it has a perfect balance with a long tasting, harmonious finish.
Regarding food pairings, one can enjoy it with scallop and watercress salad, crayfish or mature goat cheese.
The Héritages Châteauneuf du Pape is a fine blended wine from the Southern Rhône Valley. The red wine is a mix of four grapes: Grenache, Syrah, Mourvèdre, and Cinsault. It carries a complex nose combining mocha, cocoa, spices on a background of red fruit.
